Fancy making Veganuary last longer?

This year Veganuary was more popular than ever before. Plant-based food is gaining more fans whether they’re veggie, vegan, flexitarian, climatarian, or meat eater. If you want to experiment with cooking vegan food for a healthy and balanced diet, we’ve put together a list of some of our favourite recipes that can be prepared using our amazing range of food processors!

Food Processor

Chickpea burger

A lot of people think that making burgers from scratch is a long and arduous process, but this is a surprisingly straightforward, delicious recipe that anyone can make at home with the right equipment.

Simply throw a can of chickpeas, an onion, a clove of garlic, a teaspoon of cumin, a teaspoon of coriander, some flour and a little salt into one of our food processors and blend until smooth. From here you simply need to mould the mixture into burger shapes and fry for a few minutes on each side. It couldn’t be simpler, and you can customise this recipe to add any vegetables or seasoning you like.

Hummus

A vegan classic, this recipe can be made using any of our food processors/blenders and is much better than the shop-bought version. One can of chickpeas, one garlic clove, 60ml of lemon juice and 30ml of olive oil is all you need to make the perfect hummus. Add these ingredients into your blender, plus any seasoning you would like (we recommend tahini, cumin and a pinch of salt), and blend until smooth and creamy.

Carrot and coriander soup

This soup is the perfect winter warmer on a cold January evening. Simply fry one chopped onion on medium heat for 5 minutes before adding in one chopped potato and 450g of carrots, then pour in 1.2 litres of vegetable stock and one teaspoon of coriander and bring to the boil. Reduce the heat and simmer for 20 minutes, before tipping everything into your food processor and blending until smooth. Add in some fresh coriander and salt for the perfect flavour combination.

Banana oat pancakes

If you think healthy pancakes are boring, think again! These vegan, gluten-free banana oat pancakes taste incredible, and the batter can be prepared instantly in a blender.

All you need is 125g of oat milk (or your preferred vegan milk alternative), 1 banana, 100g of rolled oats, 1 teaspoon of vanilla extract, 2 teaspoons of baking powder and a sprinkle of cinnamon. Mix the ingredients together in a blender, then scoop spoonfuls of the batter into a pan on medium heat with some vegan butter or oil. Once the pancakes are cooked, feel free to add your own toppings - we suggest berries, maple syrup or vegan yoghurt.

Pesto

For a simple, tasty pasta recipe, why not make your own pesto from scratch? All you need to make the perfect pesto is a great blender. Throw in a packet of basil, a handful of pine nuts, 3 cloves of garlic, a squeeze of lemon juice, some olive oil, a pinch of salt and a few tablespoons of water. Serve with your favourite type of pasta and a sprinkle of vegan cheese.
